Apple Cinnamon Muffins

60g Walnuts

60g Almonds

150g Apples (unpeeled, cored and cut into pieces)

2 Eggs

60ml Milk

90g Brown Sugar

120g Neutral Oil (I used sunflower)

150g Wholemeal self-raising flour

1tsp Cinnamon

  1. Preheat the oven to 160c. Line a 12 hole muffin tin with paper cases and set aside.
  2. Chop the walnuts until coarse (I used my thermomix) – set aside
  3. Put the almonds into the thermomix and ground until fine. You can substitute almond meal instead.
  4. Grate the apple and add it to the almond mix.
  5. Add eggs, milk, sugar and oil and combine.
  6. Add the flour, cinnamon and 40g of the walnuts and mix.
  7. Divide the mixture between the cases and sprinkle with the remaining chopped walnuts. Bake for 20-25 minutes or until a skewer inserted into the centre of the muffins comes out clean. Allow to cool in the tin for 5 minutes and then transfer onto a wire rack to cool completely.
