
7-8 Dried Apricots (you can use figs if you would rather, or more dates) – chopped small
7 Pitted Medjool Dates – chopped small
130g Mixed Nuts, unsalted – chopped small
50g Shredded Coconut – desiccated
25g Dried Goji Berries/Dried Cranberries
140g Almonds ground or Almond Meal
60g Protein Powder (or 60g extra Almonds)
3 Eggs
40g Honey (optional)
30g Water
15g Chia seeds
40g Sunflower seeds
20g Linseed/Flaxseed
30g Pumpkin seeds
- Grease a baking dish or tray approx. 30cm x 20cm and line with baking
paper so that it comes up the sides a little. - Put apricots, dates, mixed nuts, shredded coconut and goji into
a mixing bowl. - Add 140g almonds (add an extra 60g almonds if you aren’t using
protein powder) and protein powder in a separate bowl and mix together. - To the almonds bowl add eggs, honey and water and mix together.
- Put the reserved chopped ingredients back in and add all the other
remaining ingredients and mix well. - Spoon the mixture into the greased/lined baking dish or a brownie
tray, wet hands and push down spreading evenly into the dish. Cook at
160 C for around 20-25 MINS or until it starts to get golden on the top.
Better to under-do than overdo this one as it can dry out and we want it
to be nice and chewy. - Once completely cooled, cut into 20-24 bars and store in the fridge. It also freezes well.
